Why should you be Juicing Vegetables?

You are probably aware by now, unless you’ve been living under a big rock, that eating veggies raw or lightly steamed is better for you than cooking them.  Cooking, and even heating, whole vegetables damages the delicate molecular structure of the food, making much of it almost nutritionally “dead” and lacking in the oxygen and enzymes that we need in order to digest it.  Without those vital enzymes, we have to USE UP energy in order to digest the food, which is counter-intuitive as it gives us very little in return.  The answer is to juice them up!  (more…)

The green juice revolution is spreading by the day with new and snazzy juice bars springing up in almost every town.  In fact, when I visited the farmer’s market in Dun Laoghaire last weekend I noticed that the juice bar there had a longer queue of people than the coffee stall!  It seems people are catching on to the benefits pretty fast, which is fantastic because juices are an amazing way to get lots of nutrients into your body very quickly and nothing will give you a better buzz in the mornings or when you need a pick-me-up!  (more…)
