I know it’s mid-summer, but here in Ireland we do get these grey, drizzly wet days that just make me want to curl up with a warm drink!  Yes, this is dairy-free, and yet divinely creamy.  I couldn’t think of any other way to describe it! I have to admit to not being a huge fan of ice-cream, but I’ve recently bought myself an ice-cream maker and really want to have a go at making raw, dairy-free ice-cream in the proper way.

Up until now whenever I did fancy ice-cream I would make it instantly using frozen banana in the food processor, which is exactly what this recipe is…. with the added deliciousness of creamy butterscotch sauce which turns something already very nice into something pretty spectacular! (more…)
